It all started when Al
Bieker began his business with his sister in the
Plantation Grill in Salina, Kansas. They built the Chickenette at its present location on Vine Street. Many
thought it would never go, but on April 23, 1949, they
opened the doors and started serving chicken fried by a
new process. With the help of the people of Hays and the
surrounding area, they saw their dream come true.
They drew travelers from the nearby highway and many
even today still stop by as they visit Hays. Visitors
still ask about Al
and Lucille and talk of the days when
Al was in the kitchen.
Al and Lucille Bieker retired in 1967 when they sold the
restaurant to Mel and Annette Ruder. They continued the
tradition until 1976 when the Ruders sold the restaurant
to Richard and Donna Schmidt. Richard passed away in
October 1998 and Donna continues as owner with their
youngest son Noel managing the restaurant. Several
members of the Schmidt family still work part time along
with the granddaughters. Like Al, many miss Richard
sitting at his special table by the kitchen door and his
witty conversations.
Although Al passed away in June 1969, we are still
visited by Lucille. A very special feeling will always
be held for her and we thank her
for all the help she
has given from her many years
of experience spent here.
The restaurant remains much as it was with the 50's
style atmosphere and neon lighting and every effort
is made to keep the tradition started so many years ago.
We would like to think that Al Bieker would still be
proud to have his name carried on while we try to live
up to his ideals.
